After thanksgiving feast (Turkey Face Sanwiches)

So today I decided to make turkey face sandwiches for lunch, using the leftover turkey and rolls. SO YUM, but when I was grating (or what I like to call zesting) the Parmesan cheese that was slightly unfrozen for the garnish, I zested my thumb again!!! but this time, farther down, more on the base of my thumb. I hate when I do that. So Steven finished zesting the cheese for me.


Open-Faced Turkey Sandwiches With Parmesan Cream Sauce And Bacon
Serves/Makes: 6    |   Difficulty Level: 3    |   Ready In: < 30 minutes

Ingredients:


***Sandwich***
12 slices bacon
12 slices firm white sandwich bread
unsalted butter, softened, for spreading on toast if desired
1 pound sliced roast turkey breast (from leftover roast turkey)


***Sauce***
1/4 cup unsalted butter
1/2 cup all-purpose flour
2 1/2 cups milk
1 large egg yolk
1 cup freshly grated Parmesan, plus more for sprinkling
freshly ground white pepper
salt
1/4 cup well-chilled heavy cream



Directions:
In a large heavy skillet cook bacon in batches over moderate heat, turning it, until golden brown and crisp. Transfer bacon, as cooked, to paper towels to drain.

Toast bread and if desired, discard crusts and lightly butter toast. Arrange toast on 6 flameproof plates and divide turkey among toasts.

Preheat broiler.

For Sauce: In a 2 to 3-quart heavy saucepan melt butter over moderately low heat and whisk in flour. Cook roux, whisking constantly, 3 minutes.

Add 2 cups milk in a stream, whisking, and bring sauce to a boil, whisking. Simmer sauce, whisking occasionally, 5 minutes.

While sauce is simmering, in a bowl, whisk together the egg yolk and remaining 1/2 cup milk. Whisk about 1 cup sauce into yolk mixture.

Remove pan from heat and whisk yolk mixture into sauce with Parmesan. Cook sauce over moderately low heat, whisking constantly, until a thermometer registers 160 degrees F. Remove pan from heat and season sauce with white pepper and salt.

In a small bowl whisk cream until it just holds stiff peaks and stir into sauce.

Spoon sauce evenly over turkey and sprinkle Parmesan evenly over sauce. Broil sandwiches in batches about 2 to 3 inches from heat until sauce is lightly browned, about 2 minutes.

Arrange 2 bacon slices in an X on each serving.

college classes

Well apparently if I start taking interior design classes winter semester I have to take 18 credits this semester, and 11 over the summer, or my schedule will just NOT work out the rest of the semesters. So instead, I am taking 2 electives and the non-program specific/but required for my degree/no prerequisite classes this semester and starting the interior design classes fall semester. The classes in the suggested schedule that I moved up to this semester I will just replace with my other electives! I am registered for all my classes, and now all I am waiting on is my housing and financial aid applications to be accepted (or not).
I have one class monday, 4 classes tuesday and Thursday (starting at 9:20 and ending at 6:00), 2 classes wednesday, and one class friday.
I will get a job on campus that I can work about 10 hours a week to have "play money" as mom calls it and then use the rest of my time to do homework! It is pretty exciting!

All done setting up my blog I think. Now time to clean the kitchen, make some mousse, make pies pretty, and shave some chocolate :)

Just so you know, I think there is a way to make your blog private. I think I made it so no one can read it unless I allow them to, and I'm pretty sure I made it so it doesn't show up when people push the "next" button. If I am correct, you will not be able to view this post unless you read it from your wife's thing or if I add you to the okay list.

Thanksgiving Dinner

Tonight we are having a thanksgiving dinner, because my sister is here today, but won't be here Thursday. Instead of buying a whole bunch of pies like we normally do, I made two and we bought one. One of the pies is a pumpkin cheesecake. Man, does canned pumpkin STINK! but after i poured the cheesecake batter into the crust, i got a little on my hand and licked it of. May I just say, I AM AMAZING!!!!! MMMM! I CAN'T WAIT TO EAT IT!!!!!!! I'll post pictures of it later :)
I also made a chocolate creme pie, and we bought a caramel apple nut pie.
